Cod with Breadcrumb Top
What to do:
1. Preheat the oven to 200ºC or gas mark 6.
2. Chop potatoes, sweet potatoes, carrots, red onion, broccoli, green beans and red pepper and place in a roasting pan. Drizzle with oil and season with salt and pepper before placing in the oven to roast for 30-40 minutes.
3. Whilst the vegetable medley is cooking, combine breadcrumbs, chopped parsley, salt and pepper in a bowl to create your breadcrumb mix.
4. Line a baking tray with tin foil and lightly brush with olive oil.
5. Cover the top of each of the fillets in a thin layer of The Bay Tree’s hearty wholegrain mustard, then drizzle with a little olive oil. Sprinkle generous amounts of the breadcrumb mix over the mustard.
6. Place the fillets on your oiled baking tray with the crust side facing up. Bake for roughly 12-15 minutes depending on the thickness of the fillets.

Mustard Potato Wedges
Pre heat oven to 200°c.
Prick potatoes with a fork and pop in the oven until almost cooked (around 30-40 minutes).
Mix 2 tbsp of Wholegrain Mustard with olive oil.
Once potatoes have cooled, cut into wedges and toss in mustard mix.
Lay wedges on baking sheet and pop back into oven for another 20 mins or so turning once.
Great as a side dish for our BBQ Tacos.
