Roast Sweet Potatoes, Mandarin And Red Onion.
What to do:
1. Preheat oven to 180°C Fan.
2. Cut sweet potatoes in half lengthways, cut onions into eight segments, cut mandarins in half or quarters depending on size, slice garlic bulb in half horizontally and separate some of the cloves, place in roasting tin.
3. Cover with remaining ingredients and mix well to combine.
4. Roast in oven for 45mins-1 hour, turning veg over half way.
5. Serve hot or warm, with tahini dressing or just drizzle with olive oil and roughly chopped fresh coriander.

Cured Salmon
1. Place salmon fillet skin side down on piece of clingfilm.
2. Mix all marinade ingredients and spread evenly over salmon.
3. Wrap securely in clingfilm and place on tray in fridge for 48 hrs.
4. After 48 hrs, remove clingfilm, excess liquid and any marinade, wipe with kitchen paper.
5. Slice thinly and serve as starter or canapé, garnished with more Game On Orange Jelly with Cardamom & Chilli and fresh herbs of your choice.
