Rarebit Stuffed Mushrooms

Make sure to not make the mixture too wet when adding the stout.


What to do:

Remove the stalks from the mushrooms, brush them with oil and place in the oven for 15 minutes at 180'C or gas mark 4.
Whilst the mushrooms are cooking the rarebit filling can be created:
To a saucepan add the Worcestershire sauce, hearty wholegrain mustard, cheese, butter, flour and pepper. Mix everything together well before slowly adding the stout.
Mix the rarebit until it is a nice thick consistency before removing it from the heat.
Remove the mushrooms from the oven and fill them with the rarebit.
Place them under the grill for a further 2 minutes or until the rarebit is golden.
Serve on their own as a light lunch or with the side of your choice for a tasty dinner!
