Sweet Chilli & Lime Salmon

Serve with jasmine rice or a nice salad.
What to do:
Preheat your oven to 200'C or gas mark 6. Cut 4 squares of baking paper and brush them lightly with oil. Place a salmon fillet on each piece of baking paper, then score the fish. To a bowl add the coriander, sugar, lime juice, sweet chilli jam and fish sauce. Mix together and brush each salmon fillet with it. Top the fish with a few pieces of spring onion each before folding the baking paper over the fish to create a parcel. Secure the ends of the parcel by twisting them. Place the parcels onto a baking tray and bake for 12 minutes or until the salmon is cooked. Once cooked remove from the parcel and serve.
