Bourbon & Sweet Chilli Sausages
What to do:
Preheat your oven to 220°C or gas mark 7. Line a baking tray or roasting dish with tin foil. Place your sausages or cocktail sausages in your tray. In a bowl combine the Sweet Chilli Jam, bourbon and honey and mix together. Pour the marinade over the sausages and toss them to make sure they're all coated. Place the sausages in the oven for 30-40 minutes ensuring they are turned regularly to ensure they are evenly cooked.

Cheese Straws with Sweet Chilli Dip
What to do:
Preheat your oven to 220°C or gas mark 7. Lightly flour your surface and roll out the puff pastry, scatter over 2 handfuls of Wyke Farms Extra Mature Cheddar then fold the pastry in half. Roll out the pastry to the same thickness as a £1 coin before cutting it into 1cm strips. Twist each strip a few times before laying them on a baking sheet. Scatter the twists with two more handfuls of Wyke Farms Extra Mature Cheddar before baking them for about 12 minutes or until the cheese straws are golden brown. Leave the cheese straws to cool before serving with The Bay Tree’s sweet chilli jam!

Creamy Chilli Dip
Method.
Gently heat a few tablespoons of Sweet Chilli Jam in a small pan until it begins to melt.
Pour over cream cheese and mix well.
Serve as a dip with crackers, veg crudités and tortilla chips.
