Passionate Cheesecake

Enjoy with a glass of pink champagne!
What to do:
Crush the biscuits in a bowl until reduced to crumbs. Melt about 40g butter and add into the biscuit mix until all are coated. Firm down into a cake tin and place in the fridge to cool. In a bowl mix together a jar of our Passion Fruit Curd, some icing sugar and the Cream cheese. Mix until thoroughly combined. Spread over the biscuit base and smooth down, put back into the fridge to stay cool. Slice up some fresh fruit to arrange on the top of the cheesecake or alternatively, sprinkle shaved pieces of dark chocolate over the top.
