Cheese Parcels

Try with Brie or other soft cheeses

Keep the cheese in the fridge to make it easier to cut

What to do:

1. Preheat the oven to 190°C or gas mark 5.
2. Using a sharp knife, slice the rind off the top and bottom of the Camembert and cut into quarters.
3. Cut each sheet of filo pastry in half vertically.
4. Place 3 halves of filo pastry on top of one another, brushing melted butter under each layer.
5. Place the Camembert in the centre of the filo sheets and place a tablespoon of cracking cranberry sauce on top.
6. Lift the corners of the pastry until they meet in the middle, twist the tops to create a parcel.
7. Repeat using the remaining Camembert pieces.
8. Place the parcels on a lightly oiled baking tray and place in the oven for 25-35 minutes or until the pastry is golden brown.
9. Allow the parcels to cool slightly before serving with salad.
