Origin of our awesome aubergine pickle

At the beginning of 2016 our Sales Team were invited into Emma’s kitchen for a day of preserving. They were encouraged to experiment and create the recipe of their choice. We didn’t expect to come away with any new product idea, but we did!

Our awesome aubergine pickle was the creation of our Sales Support Manager, Janet!

Having made plenty of jams before, Janet was keen to give chutneys a go. She decided on creating a chutney using aubergine as it is currently her favourite colour! With the assistance of Emma the other vegetables for the chutney were chosen as factors such as the water content of the vegetables must be taken into account.  

They knew almost immediately that their recipe was going to work and with Emma’s seal of approval it was decided that it would become a new member of The Bay Tree’s pickle range! After some time with our NPD department to tweak the recipe so that it’s absolutely perfect for you, we launched our new awesome aubergine pickle in October 2016.

Our awesome aubergine pickle is a tasty combination of chunky vegetables and sweet aromatic spices. This beautiful flavour palate works across a number of different recipes from giving your cheese toasty a tasty kick to adding that little something extra to your curry!
