Lemon Curd Drizzle Cake

Perfect with a cup of tea or with cream as a dessert.


What to do:

Mix the soft butter and sugar together in a bowl until creamy add the Lemon Curd and the rind of a lemon, add the egg, mix well. Sift the flour and baking powder into the bowl and mix. Add the lemon juice and mix well. Pour into a greased and lined 1lb loaf tin.
Bake in the oven at 180'C for 30 - 40 mins, when cooked test using a knife, if it comes out clean it is cooked if not continue cooking until done.
Mix the granulated sugar, lemon juice and elderflower cordial together.
Spoon the syrup over the cake when still hot and leave to cool on a baking tray.
Serve cut in slices or serve as a pudding with whipped cream and blueberries.
