Jack-o-Lantern Stuffed Peppers!

Scary Halloween snacks that are frightfully tasty
These spooky Jack-o-Lantern stuffed peppers are the perfect pre-trick-or-treating meal! Give this easy yet fun recipe a go and make the ordinary extraordinary!
Ingredients:
- 2 chicken breasts
- 2 tbsp The Bay Tree's spicy tomato & caramelised onion chutney
- 1 tsp chilli powder
- ½ tsp black pepper
- 1 clove garlic
- 1 can diced tomatoes
- 150g rice
- cheese
- 4 orange bell peppers
Method:
If you have a slow cooker, throw in the chicken, Spicy Tomato & Caramelised Onion Chutney, chilli powder, black pepper, garlic and tomatoes in the morning and it’ll be cooked by the evening! If not, cook the two chicken breasts thoroughly, then shred the chicken and return it to the pan. Add the Spicy Tomato & Caramelised Onion Chutney, chilli powder, black pepper, garlic, diced tomato and cook through.
At the same time bring some water to the boil, add the rice and cook until al dente. Drain and put aside.
Cut the top off each of the bell peppers, remove all the seeds and carve a spooky face into each pepper. Mix the rice and shredded chicken mixture together and fill each bell pepper. Top with grated cheese, replace the bell pepper top and bake for 30 minutes until the cheese is melted and the pepper is cooked.
