Glorious Garlic Bombay Potato

Suitable for home freezing
What to do:
Chop and par-boil two medium sized potatoes until half cooked then set aside.
Chop and gently fry half a small onion until soft.
Add a small can of chopped tomatoes and about a teaspoon of medium curry powder.
Stir in half a 400g jar of Bay Tree Glorious Garlic Pickle and heat gently until simmering.
Add the part-cooked potatoes and stir occasionally over a low heat until potatoes are cooked through. The starch from the potatoes will thicken the sauce, so add a little boiling water if necessary.
Serve as a side dish with any Indian meal.
