Coronation Triflé - The Start(er) of an Era

The Bay Tree Food Company from Plymouth is proud to announce that it has been selected to supply the Coronation Sauce and Mayonnaise for the bottom layer of the Coronation Triflé.

The triflé (not to be confused with a trifle, which is a sweet dish) is a three layered starter that will be served at the banquet to be held at Buckingham Palace after the coronation of King Charles III on Saturday 6th May.

The Royal Banquet

Kept as a closely guarded secret until now, details have just been revealed about the food to mark the celebration.

The idea of a celebratory royal dish is not new and the multi-layered nature of this recipe is a nod to the Platinum Pudding created for Queen Elizabeth's Platinum Jubilee. However, His Majesty does not have a sweet tooth, and he requested a savoury dish to bear the official coronation designation.

Consisting of three layers, each component has a significance to the coronation. The bottom layer is a tribute to Queen Elizabeth in the form of coronation chicken which was created for the banquet of her coronation in 1953. Above this is a layer of garlic & herb wedges made with a mix of Jersey Royals and King Edward potatoes. Not only are chipped potatoes a national favourite, but the King Edward potato is a variety that was created and named in 1902 to commemorate the coronation of Edward VII. Topping the trio is a seafood salad containing Queen scallops and King prawns.

"We are overjoyed to be selected, but to be asked to supply multiple ingredients for a royal banquet is a true honour," said Bay Tree founder Emma Macdonald. "We only launched the Coronation Sauce at the start of the year, so we were amazed when the palace contacted us about it. We knew it was good, but to be chosen for the coronation banquet is amazing. Getting the mayonnaise selected as well took a bit of cheek, but it paid off. The Coronation Sauce needs to be mixed with mayo to use it, so when we were asked to send samples of the Coronation Sauce, we sent in the mayonnaise as well. The palace said it was 'quite simply the best available', so they requested that as well."
